Healthy Bowl(Burrito Bowl)
Today, I am gonna make one special recipe that I just love it!!! It’s super healthy and super nutritious!!!
Rice 2 Cup Use brown rice to make it more healthier
Black beans 1 Cup
Tomato 2 large
Sweet Corn 1 Cup
Avocado 1 Large Ripe
Garlic Cloves 4-5
Lemon or lime juice
Bay leaves 1-2
Iceberug lettuce leaves
1 large avacado
1/2 fine chpped tomato
Finly chopped Spring onions
2 Garlic Cloves
1 tbsp lime juice
Salt, to taste.
In a large mixing bowl mash avocado, Add Chopped tomato, spring onions, lime juice, and crused garlic cloves. Season it with salt to add taste.
Add following ingredients in the bowl
1 pound tomatoes, cut into ¼-inch pieces.
¼ cup finely chopped red onion.
¼ cup finely chopped fresh cilantro.
3 Jalapeno peppers, seeded, steamed, and finely chopped.
2 teaspoons fresh lime juice.
and finally salt to taste.
First soak the rice in water for 15 minutes (Soaking will decrease the cooking time of rice)
Cook the rice with 1 tbsp oregano , lime juice, bay leaves and salt.
Boil the sweet corn with salt and black pepper.
Soak the black beans in water overnight or 6 hours, then cook with salt until it softens.
Veggie Mix :
Heat 1 tbsp olive oil in pan, add thin long sliced onion and saute it for 1-2 min. Now add thin long sliced bell peppers(Red,green,yellow) cook for 3-4 minute on medium heat. Once your veggies becomes soft, add seasoning salt, black pepper and oregano. Cook for another 2 minutes.
Now lets design the dish. In the bowl, divide rice mixture into serving bowl, top it with black beans, tomato salsa, guacamole, veggie mix, corn and lettuce in any pattern you like! You can of course copy my design as shown above 🙂
