Tomato Bruschetta

 

Today I am gonna work on some side dish which is ready to cook. Tomato Bruschetta!!! Since it’s a dish with less vegetable and no fruits, to make it healthful I am adding Olive Oil and Basil which are enriched with disease fighting antioxidants!!! So lets begin….

Cheery tomato or baby Roma tomatoes chopped             1 cup

Basil finely chopped                                                                2-3 tbsp           Vitamin K

Extra virgin Olive oil                                                                1/2 tbsp          Vitamin E

Garlic clove                                                                                     1

Coarse salt                                                                                    1/2 tsp

Black Pepper                                                                                1/2 tsp

Italian bread,toasted

Parmesan cheese

Recipe:

In a medium bowl, toss all the ingredients, except the bread, until thoroughly Combined. Let stand about 15 minutes at room temperature to allow the flavors to blend. Toss again and serve at room temperature ,accompanied with bread  !!!

Make a spread for bread by mixing olive oil, Crushed garlic and basil leaves ,spread on one side of bread then place in oven fro toasting .

Tips: To toast the bread slices, preheat the oven at 400F(205C).Arrange bread in a single layer on a ungreased baking sheet .Bake on middle Oven rack for 5 minutes.
